Sweet and Spicy #Vegan Udon Noodle Stir-Fry⠀

Recipe

Good for 2-3 servings⠀

  • 400g (2 cakes) cooked udon noodles* ⠀
  • 1 red bell pepper, sliced into strips⠀
  • 1 240g block extra firm tofu, drained and sliced into strips⠀
  • ½  large onion, sliced into strips⠀
  • 1 small carrot, sliced into strips⠀
  • 4 cups (200g) shredded cabbage ⠀
  • 1 tbsp sesame oil⠀
  • Sesame seeds, for garnishing⠀
  • Chopped spring onions, for garnishing⠀
  • *Note: Feel free to use other noodles if you’d like!⠀⠀

Sauce Ingredients⠀

Preparation

1. Heat the oven to 350F. On a lined baking tray, bake the tofu until lightly golden for around 25 mins. You can opt to pan fry the tofu in some oil if you’d like.⠀

2. Mix all the sauce ingredients together. Make sure the cornstarch is diluted.⠀

3. Heat a pan. Add in 1 tbsp oil. Sauté the onions until tender. Add in the bell peppers, carrots, and cabbage. Sauté until cooked, around 10 minutes. ⠀

4. Add in the tofu and cooked noodles. Pour in the sauce mixture. Sauté for another 3-4 minutes until the noodles have absorbed the sauce. Turn off heat and then garnish with some sesame seeds and spring onions, if desired. Enjoy while hot!⠀

Deep fried Summer Rolls anyone?

Add in the cooked rice noodles, sesame oil, crispy garlic and onion salt in a big bowl (set aside).

Place a spring roll wrap onto a towel and fill it with all the fresh veggies and top some cooked glass noodles. Make a sausage like shape out of the fillings at one end of the wrappers. Fold sides in and begin rolling the spring roll. At the end of the rolling seal it by moistening the edge with water.

Heat the oil over medium-high heat. Fry the rolls and ensure turning frequently until the spring rolls turn golden brown. Finally serve with any your favourite dipping sauce.

Simple Tomato and Basil Angel Hair Pasta

⁣INGREDIENTS

⁣• 200g capellini/ angel hair pasta⁣

• 1 can crushed tomatoes⁣

• 1/2 cup cherry tomatoes halved

⁣• 2 cloves of garlic⁣

• 1-2 tsp dried oregano⁣

• 1 tbsp olive oil and more for later

⁣• Salt + black pepper⁣

• 1 tsp agave nectar⁣

• 1/2 cup fresh basil + basil flowers (if you have them)

⁣⁣INSTRUCTIONS⁣

1. Boil the water for cooking the pasta. In the meantime, heat the olive oil in a pan and add the garlic cloves. Get the oil infused on medium heat.⁣

2. Add the crushed tomatoes, oregano, agave, salt + pepper and let simmer for a few minutes. Then add the cherry tomatoes and keep simmering.⁣

3. Once the pasta is ready, add it to the sauce and remove from heat. Add pasta water if needed and finish off with fresh basil, salt + pepper and a drizzle of olive oil. Enjoy!⁣⁣

Spicy Steamed Dumplings

Preparation

  1. Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins.
  2. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt.
  3. Place both ingredients in a big bowl. Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy.
  4. Add tofu mixture, starch, combine well & season if needed.
  5. Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal.
  6. Place wontons on a steamer basket and steam for 15mins in high heat.
  7. Remove and serve warm with spicy sauce.
  8. You can serve sauce on the side or as pictured.

Creamy Coconut Curry Noodles

Coconut Curry soup

Preparation

Add in the garlic in a hot pot with heated oil and sauté till fragrant. Then add in the red curry paste, lemongrass puree, onion powder, ginger powder, tumeric and kaffir lime leaves all together. Cook and stir it occasionally until fragrant for about 1 minutes. Next add in the coconut milk and water, continue stirring until the curry is boil. Followed by adding in the brown sugar, salt and pepper for taste. Lastly stir in the lime juice and serve with noodles.

Sesame Crusted Tofu

Preparation

Heat 1 tbsp of oil in a frying pan, while waiting place the aquafaba in a small bowl and set aside. Mix the breadcrumbs, white sesame, black sesame, salt and pepper in a another bowl. Dip the tofu in aquafaba then place it on the breadcrumbs mixture and ensure it’s coated well with breadcrumbs. Next fry it on the heated frying pan.

Who wants a delicious Express Green Curry?

  • ·  1/2 broccoli
  • ·  1 zucchini
  • ·  15 brussels sprouts
  • ·  1/2 can of chickpeas
  • ·  2 hand full of spinach
  • ·  2 small spoons of Green Curry paste
  • ·  1 can of coconut milk
  • ·  Olive oil to spray the pan
  • ·  Fresh coriander and lime

Preparation


Heat  the pan, spray it and add Curry Paste. Once you smell the paste add coconut milk and bring it to boil. Add broccoli, zucchini andbrussels sprouts and cook with lid on for 15 min. Add spinach and chickpeas for 1 minute. Enjoy!!!
